Paula Fish sprats
Additional needs
half cup of flour
salt, pepper (freshly mashed), chopped fresh parsley
frying oil
decoration: lemon, sea salt
Preparation method:

Heat the oil on the pan to 190°C.

Sprats, salt, pepper and flour put together to linen bag, shake it well to make sprats cover by spices.

Take sprats out of bag, remove excess of spices using strainer & place sprats on the pan. Fry gently for 3 minutes, to make sprats crispy.

Dry sprats on the paper towel for few minutes. In the meantime put parsley into the oil - be careful! Make all leaves dark green, strein them and put on sprats. Sprinkle with salt & serve with slice of lemon.
