Sri Lankan Dried Sprats Stir Fry

Preparation method:

1. Prepare Dried Sprats by removing the head part of the fish (including the belly area) & wash thoroughly with medium hot water to reduce excess salt (make sure to drain water).
2. Heat up oil in a medium sized pan for about 2 minutes, when oil is hot enough add Red Onion, Garlic, Curry Leaves, Cinnamon Stick, Cardamom & mix well. Let this fry for about 2 minutes.
3. Then add Dried Sprats & let it fry/cook for about 3 minutes (make sure string during the process). Then add Potatoes & Turmeric and continue cooking for further 10 minutes till potatoes get soft.
4. Add Chili Flakes & Chopped tomatoes and cook further 3 minutes. Then take the pan out of the heat & check slat taste, if necessary add salt to your taste.
5. Serve hot with steamed rice or toasted bread.
